Chicken Sandwich
Who doesn’t love chicken sandwich ? You know that kind like fast food chain .. the famous fast food chain we all love . I am talking about chick fil a chicken sandwich . During the lockdown , obviously we weren’t able to go out and get our favorite chicken sandwich . Which was a blessing in a way because since then i haven’t been eating out at all . We ordered for the first time just couple of months ago but we haven’t been eating any fast food stuff .
So back during lockdown , i was busy baking and cooking , making the sandwich buns which led me to make my own chick fil a copycat sandwich . I don’t use chicken breast here , i tried but it didn’t taste as good , probably because it has no fat like chicken thighs . The spices i use was pretty basic pantry staple , nothing weird . The good thing about this though , the chicken is not deep fried , no flour involved . Just very little olive oil and spices mix . I will include the copycat chick fil a sauce , it’s not quite the same , but close i guess .
Ingredients :
- 2 tsp kosher salt
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp regular paprika
- 1 tsp cumin powder
- 1/2 tsp cayenne powder or more if you like it spicy
- about 6 pieces of boneless skinless chicken thighs
- 1 tbsp olive oil
Mix all spices in a bowl with the oil . When you’re ready , just dump all the chicken in the bowl , and mix it by hand until all the pieces are pretty much covered with spices . Place the chicken on a foil lined cookie sheet , preheat oven to 400 F , bake for 35-40 minutes .
Ingredients for the sauce :
- 1/4 cup light mayo ( i used duke or Hellman’s brand )
- 1 tbsp yellow mustard
- 2 tsp Dijon mustard
- 2 Tbsp baby ray hickory BBQ sauce
- 2 Tbsp honey
Mix all ingredients together , whisk well . Chill at least an hour .
Assemble your sandwich :
Use hamburger buns , spread little bit of the sauce , add spinach , chicken thighs , slice tomatoes , pickles and pepper jack cheese if you like . Picture below doesn’t have cheese . I used just spinach , chicken and grape tomatoes . You can go all fancy or just basic sandwich .
