Classic Potato Salad

Potato salad is one of american classic get together food , it is also one of my favourite salad . I am not a potato person , meaning , i hardly eat any potatoes , and if you serve me baked potatoes or mashed potatoes , i probably wouldn’t even finish 1 serving , that’s how much i dislike or care less about potatoes . But if you serve me , yummy delicious tasty potato salad , oh .. i would not be able to stop eating them !! I hardly make any potato salad at home , just because it would only be me who eats them , my husband doesn’t really care about it , but taste does change .. and he started eating egg salad too , who knows , he might love this potato salad . Classic potato salad is easy , the only thing that takes time is the prep , boiling the eggs , the potatoes , peeling the eggs , peeling the potatoes , chopping doesn’t really take much time , but waiting and peeling potatoes take time . Anyway this is a delicious recipe of potato salad .. very classic !Oh btw .. picture doesn’t do any justice though ..

You need :

About 6 medium size gold yukon potatoes

3 boiled eggs

1 celery stalk , chopped

3/4 medium onion , chopped

1/2 cup of relish

1/4 cup of mayonaisse ( i use hellman)

1 tbsp. of dijon mustard

1 tsp. of salt

1/2 tsp. ground black pepper

1/2 tsp. heinz vinegar

1.In a large pot , add potatoes ( washed and scrubbed ) , make sure the potatoes submerge , turn the heat medium high , bring to boil , once it boils , turn it down to simmer , boil for 25 minutes .Test it with paring knife . Take it out , let it cool .

2. Mix the mayonaisse , dijon mustard , salt and pepper , and the vinegar . Mix well .

3. In a large bowl , mix all ingredients together , diced potatoes , onion , celery , relish and the dressing , mix well , adjust to taste . Refrigerate .
