Fresh Thyme and Garlic Broiled Catfish
Our family likes to cook something pretty easy during the weekend , occasionally , we like to make something complicated , just because everyone can pitch in and help . But not today , we chose to cook something simple , easy and quick . So we landed our choice to broiled catfish . Seafood is so cheap over here , and it’s kinda nice to be able to eat more seafood !! This broiled catfish doesn’t take long to prepare , doesn’t take long to cook either . I partly broiled the catfish then baked it . It was pretty yummy , my 7 years old demands me to…

Collard Greens
I never had collard greens , though i’ve heard that southern people like collard greens . But living in Indiana , you hardly seen greens being sold at the groceries , other than green beans , lettuce , corn , spinach , those kind of stuff . Even kale is sometimes hardly available , let alone mustard greens , collard greens .. I guess living down south has its own advantages , such as , plenty and cheap vegetables ! So i took that advantage today too , by trying collard greens . I thought how hard can this be to cook anyway ? It’s vegetable , couldn’t be any…

Cheese Crackers
Normally i would just use parmesan cheese for these home made cheese crackers , but the other day i saw Edam cheese was on sale at the grocery store . I picked up Edam cheese , i hardly use Edam cheese . The only thing i know that they don’t have stinky smell like most cheese does , and they have a slight nutty flavour , similar to Gruyere cheese , and usually we use Edam cheese for dutch cheese cookies ( Kaastengel ) . I though it wouldn’t hurt just to try using Edam cheese for these crackers . Turned out i have probably few tbsp left for the…

Caramelized Grape Tomatoes with Sausage Rigatoni
This is a simple pasta dish that i thought .. should be quick to make and delicious and easy . I was inspired with one of the recipe on the website , but , i didn’t like the fact that the dish didn’t include garlic or onion . So i adjusted the recipe and added few ingredients that i think is a must in italian dish .. You need : 1 package of hot italian sausage , if u don’t like hot , choose the sweet sausage then Olive oil In a pan , heat the olive oil , slice the sausage and then cook until it’s done and brown…

Swiss Chard with Bay Scallops
Never tried swiss chard before . But according to a friend of mine , swiss chard is really delicious . I remember everytime i went to the farmer’s market , the next day when he found out , he would ask me , if i saw swiss chard because he’s been looking for it . So .. these past couple weeks , i saw swiss chard at the grocery store .. not to be mistaken with rhubarb btw .. since they both have red stems . Swiss chard comes in 2 colors , white and red . The red one looks pretty , so that’s what i picked up ..…

Deep Fried Yellow Squash
Alright , first of all , i don’t usually cook using Paula Deen’s recipe , since i don’t like using overload of butter or mayo or cream cheese like she does . But this one looks pretty delicious , reminds me of vegetable tempura on food stall . So i thought i should give it a try , super easy and if you like squash or don’t like it .. you will still like it . As they all say ” everything is good fried ! ” You need : About 4 yellow squash , cut about 1/4 inch thickness 3 large eggs 1/2 cup of buttermilk Beat eggs and…

Strawberry Bread Pudding with crème fraîche whipped cream
I was browsing on my tab the other day , and on my pulse app i had subscribed to Chow , and the recipe of the day was all about summer dessert . Which is strawberry , and i happened to have it in the fridge . Last week when we did our grocery shopping , my husband picked it up and when i asked if he had any plan to use that strawberry ( since i am the one who always does dessert ) , he said just to eat it like that . Oh .. alright .. good , cos i didn’t have any plans for any strawberry…

Chicken Marsala w/ Mascarpone
This is something that i tried , i went browsing not too long ago and found this marsala recipe . The chicken marsala that i usually cook is awesome , and i love the taste . But i thought i should give this one a try since it was a recipe from a real italian chef , Giada de Laurentiis . So i figured it should be good .. Well .. i can’t say that it’s bad either , but this one though was def. richer than the regular chicken marsala i cook . I personally love the regular one , without the cheese . But anyway , i am…

Fiesta Chicken Fajita Salad
This would be a great meal for hot summer days . And that’s what we had tonight , it’s super simple and easy . It requires salsa , if you do want to make it even easier , you can always get a jar of store bought salsa , but i made my own , since they’re not hard at all and you can adjust the taste to your preference . Other than that .. just a can of black beans and sweet corn and chicken breasts , and you’ll be ready for your salad ! For home made salsa , you need : (if you buy store bought ,…

Broiled Vegetables with Parmesan
Easy side dish and yummy . I made this to be served with my chicken saltimbocca . Broiling the potatoes make the skin very crispy and it’s delicious !! I am not so much into baked potatoes or mashed potatoes , although i like fries .. but we all know by now how bad fries for our health . So , in this side dish i threw in some yellow zucchini and regular zucchini in . And i thought it tasted pretty good . So here it is .. You need : Small red potatoes or yukon potatoes , choose small ones because they cook faster, i don’t want to…

Chicken Saltimbocca
I have been wanting to try this chicken saltimbocca for quite some time , but i kept postponing it because i thought it’d be too hard to roll a thin chicken breast into a jelly roll style , i would think it’d be easily crumbled and stuff . Well , it’s actually not as hard as i thought , but a little messy though .. my stove was pretty messy from the grease splattered here and there . The result was really worth it . While i was cooking this , my 7 years old son , asked me ” Mom , what are you cooking ? ” I answered…

This recipe is adapted from Maangchi website . I learned a lot of korean cooking from her website , it is an awesome website , i knew nothing about korean cooking then i ran across her website a while back ago and since then i’ve learned quite a bit of korean dishes . And they’re one of the yummiest cuisine i ever tasted !
